What is specifically out this year is solid fats. There are 3 vegetable based solid fats: hydrogenated oil, palm fat, coconut fat. Hydrogenated fat contains a lot of trans-fat - which is bad. Coconut fat tastes of coconut and is very expensive. There is nothing much unhealthy with palm fat, probably. There is something wrong with the fact that rainforest is being cleared and orangutans are dying so that it can be produced cheaply. So I am investigating creating replacements for foods that usually need solid fats.
Should be an interesting journey :o)
