"Fat-free" Biscuits

First recipe to go up on The Healthful Vegan, and it's for biscuits of all things.
Well they are relatively healthy as biscuits go :o)

You might see alternative versions of this recipe crop up elsewhere as it is one of many variations of my "Fat-free" Pastry recipe.

Ingredients
60g unsalted mixed nuts (I used mix of brazil, walnut, hazelnut and almonds)
40g unsalted cashews
75g whole oats

100g wheat flour
50g sugar

Optional bits and pieces
Choc chips, 2 tsps ginger powder, chopped crystalline ginger (optional)

Method
Grind the nuts and oats to powder with a coffee bean grinder.
Mix the flour and sugar in and rub everything together between your fingers to make sure it is mixed well.
Stir in the choc chips and ginger (if using).

Drizzle a tiny amount of water in at a time until you can make a nice dough ball. Then add a little more water and mix it in well. If it is too crumbly when you roll it out, it needs to be a bit wetter.
If you use too much water, work some extra flour in.

Roll it out on floured surface to a thickness of about 7mm (the choc chips will prevent you going too small) and press out small rounds and place on an oiled baking tray.

Bake for about 10 minutes at 200 c (400 f) until just going golden at the sides.

So they're not exactly free from fat, but there was none added, and particularly no animal fat, palm fat or hydrogenated fat. I think raisins would work really well instead of the ginger and choc chips, and I intend to try that soon.
